Kampot pepper is grown in the province of Kampot, located in the southern part of eastern Cambodia. This region, with its coastal climate and geological conditions, allows local farmers to produce the highest quality pepper in the world. This pepper has earned a protected geographical designation, similar to French champagne. We purchase pepper directly from small family farms under direct trade conditions, ensuring fair compensation for every grower. We strive to promote this approach among other traders as well. Green fermented pepper offers an incredibly delicate taste of fresh green peppercorns with a subtle grace. The lyophilization process elevates it to the heights of divine bliss with a delicate touch of sea salt. Its soft texture melts on the tongue, gradually unfolding from a backdrop of mild freshness through friendly spiciness to a light acidity and notes of fresh green pepper.

What makes our fermentation technology and subsequent lyophilization of green pepper so unique? How have we managed to transform a peppercorn into a perfectly complex seasoned pepper flake? The fermented Kampot pepper contains fresh green grains processed by an ancient Japanese fermentation method directly in Cambodia. A pinch of fleur de sel, obtained by evaporating sea water in Kampot, is added to the pickled peppercorns. During the subsequent lyophilization, the grains are freeze-dried, which removes moisture and further enhances the already refined taste of the pepper, which we were the first in the world to develop. Crushing this fully seasoned pepper creates fine flakes that are the authentic form of green pepper with the taste of salt and green tea. Thanks to careful selection meeting the strict quality requirements for pepper exported from Kampot, set by the Kampot Pepper Association, only the best grains are always hand-picked. These are then vacuum-packed to preserve quality and freshness during the journey to Europe, where they are further selected, packaged, and delivered right to your table.

Usage

Pepper flakes are crushed after fermentation and freeze-drying. This is appreciated in every kitchen where there is no grinder or mortar. Thanks to two different processing methods, flakes are primarily suitable for adding a finishing touch to dishes, similar to how pyramid sea salt is used.

Packaging

We package the pepper in resealable pouches ranging from 20 to 100 grams in volume. Thanks to the materials used and the special bag-sealing technology, air and moisture are kept away from the pepper. After emptying the pouches, you can upcycle them as part of sustainability efforts and continue to use them in various other ways.
