They differ in their taste and aroma, which you can hardly find in pepper bought in regular supermarkets.


Black Kampot pepper releases notes of eucalyptus, camphor, and thyme, accompanied by the scent of lime peel. These aromas gradually evolve into seaside freshness and fruity tones. Dominant are notes of peach and nectarine, complemented by hints of pine and the earthy character of Cambodia’s mineral-rich soils.

Rare red Kampot pepper is an explosion of fruity tones with gentler heat. It starts with notes of rose and rosehip, which transition into dried cherry. After two to three minutes, the most typical Kampot aromas emerge—citrus fruits, dried mandarin, and the sour crust of sourdough bread.

White Kampot pepper is delicate yet remains boldly peppery, caressing the palate. Upon grinding, aromas of camphor, sage, and cedarwood are released, with subtle hints of nutmeg blossom, grapefruit, and other citrus fruits. After a few minutes, you may detect notes of nutmeg, thyme blossoms, lemon balm, and underlying cedar and black tea.

Maintenance

By adjusting the grind size of the pepper, you influence its flavor profile.


The smaller the fragments, the sharper the pepper’s flavor will be. On the other hand, larger fragments will give the dish more of the specific exotic notes of Kampot pepper.

When filling the grinder, never use bare hands, but rather pour the peppercorns directly from the packaging into the chamber, using a spoon or funnel to help. Also, don't forget to clean your grinder regularly. Never use water or chemical agents to do so. A cloth, small brush, and a drop of olive oil will do. Always keep the grinder away from the sink and handle it with care, especially over steam.

Material

The grinder is made from high-quality sandblasted ash wood, which stands out thanks to its unique color and grain.

It is complemented by a metal body part, ensuring it will last you a lifetime. You can choose between a black or natural wood color.

Grinding mechanism

Inside the grinder are two ceramic CeraCut® mechanisms.

This is a German-developed technology that ensures your pepper and salt are always ground with absolute precision. You can adjust the coarseness on every grinder, and the mechanism can grind peppercorns or salt crystals up to 5 millimeters in size.
