It crystallizes on the surface of special pools called salinas, into which ocean water is directed and sealed. The water slowly evaporates under the influence of sun and wind, and salt crystals form on the surface.

The resulting crystals are harvested by hand, without the use of any machines, only with long wooden rakes. Thanks to this, the structure of the salt remains consistent and the salt stays perfectly pure and of the highest quality.

The collection and processing of sea salt — just like pepper in Kampot — is handled by individual small farms. The salt-making tradition is passed down from generation to generation. As a result, the salt is of the highest organic quality, without any need for further refining. And just like with pepper, we buy the salt directly from these farmers to ensure they are fairly rewarded for their hard work.

Usage
