Delicate manual labour, unchanged for hundreds of years—that’s how coarse-grained sea salt is harvested.

It crystallizes on the surface of special pools called salt pans, into which seawater is directed and enclosed. Under the influence of sun and wind, the water gradually evaporates, and salt crystals form on the surface.

These crystals are collected by hand, without any technological interference, using only long wooden rakes. Thanks to this, the structure of the salt remains consistent, and the salt itself remains perfectly pure and of the highest quality.

Similar to Kampot pepper, the harvesting and processing of sea salt are managed by small individual farms. Farmer families pass down the tradition of sea salt production from generation to generation. Therefore, the salt is of absolute organic quality, without the need for any subsequent refining. As with pepper, we buy salt directly from these farmers to ensure fair compensation for their hard work.

Usage

Thanks to its delicacy and structure, fleur de sel is primarily used as the finishing touch to a dish.

It definitely doesn't belong in a grinder; simply crush it lightly between your fingers and sprinkle the delicate crystals on the surface. They dissolve quickly and perfectly enhance the flavour of the dish. Moreover, if you apply the fleur de sel just before serving, it creates an amazing crystalline effect on both savoury and sweet dishes.
