Kampot pepper is grown in the Kampot province, located in the far south of Southeast Asian Cambodia.

This is a region which, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It’s no coincidence that this pepper has earned protected geographical indication status, just like French Champagne.

We buy pepper from small family farms under direct trade conditions, which guarantee fair compensation for every grower, and we strive to promote this approach among other traders as well.

Characteristics

The set consists of four types of Kampot pepper: black, red, white and green.


They differ in taste and aroma, which you can hardly find in pepper sold in regular supermarkets.

Black pepper releases notes of eucalyptus, camphor and thyme accompanied by the aroma of lime peel after grinding. These gradually transition into a coastal aroma with developing fruity notes. The dominant aromas are peach and nectarine, accompanied by the scent of pine and earthy tones of the mineral-rich Cambodian highland soil.

Rare red pepper is an explosion of fruity tones with milder spiciness. At first, you'll notice tones of rose and rosehip, which gradually turn into dried cherries. After about three minutes, the most characteristic aromas of Kampot pepper begin to emerge – such as citrus fruits, dried mandarins and the earthy crust of sourdough bread.

White pepper is delicate yet still pungent, gently caressing the taste buds. Once ground, it reveals aromas of camphor, sage and cedarwood, complemented by subtle hints of mace, grapefruit and other citrus. After a few minutes in your mouth, you may also notice tones of nutmeg, thyme flowers and lemon balm layered over cedar and black tea.

Green lyophilized pepper delivers the maximum fresh flavor of green peppercorns. In this case, expect an intense and rich spiciness. The flavor of the green lyophilized pepper is rounded out with fresh notes of newly cut grass, green tea and citrus, with a gentle salty finish from sea salt.

Processing

We divide the campaign pepper into three basic colors, which differ from each other by processing the fruits of pepper.

In case of black pepper With grains, when the pepper balls are still green. Subsequently, it is dried in the sharp Cambodian sun, when they get their characteristic black color and a crab surface.

Red pepper The harvest of fully ripe pepper grains is obtained. They ripen into a deep red color and are full of fructose, thanks to which this kind of pepper has its unique taste. 

White pepper It is a specialty that is obtained from fully ripe red pepper grains. They are then dried in direct sunlight and soaked again to remove the red skin, and only the creamy white pepper grain is left.

Lyophilized green pepper is harvested from fragile, unripe pepper grains. Instead of classic drying in the sun, it passes through the process of lyophilization - drying of frost, which relieves grains. The added campaign salt maintains their freshness even during transport. After unpacking, a drop of oil or water is enough to suck back moisture and pepper regains its original structure and taste, as if it were just torn out of the creeper.

Thanks to careful selection corresponding to strict demands on the quality of pepper balanced from the campaign, set by the Association of Campot Pepra, only the best grains are hand -selected manually. They subsequently vacuum to be maintained quality and freshness During the trip to the Czech Republic, where they are further selected, packed and delivered to your table.

Usage

Due to their different flavor, aroma and pungency, the individual types of pepper are suited for different purposes.

Black pepper is a universal spice that fits almost any dish. It pairs best with dark red meats. It enhances every steak on the grill or pan, but also works great in classic sauces, soups, and goes well with pasta.

Red pepper, with its fruity character, is the king of cold dishes. It works well in vegetable salads, with risotto, soups, and feel free to experiment with it in sweet desserts or mixed drinks. Instead of red meats, it pairs better with fish or light poultry.

White pepper suits light meats. It enhances the flavor of seafood, goes well with risotto, creamy soups, and its flavor doesn’t get lost even in combination with a good pasta dish.

Freeze-dried green pepper from Kampot is the most versatile of all green peppers we offer. Crushed, it works with any type of meat – red, white, game, or fish. It adds freshness to pasta, baked cheese dishes with mushrooms, and also to sauces. It shines in autumn soups, or you can try it in desserts and ice creams – the most adventurous palates will enjoy it even paired with truffles.

The finer you crush Kampot pepper, the more intense the heat. Larger fragments or whole berries will add more specific flavor tones to your dish.

Packaging

Thanks to the materials used and the special bag sealing technology, no air or moisture gets to the pepper.

Thanks to this, even after opening, the grains retain the authentic taste and aroma of Kampot pepper. Once emptied, the bags can also be upcycled as part of sustainability and reused in many other ways. We pack the pepper in resealable bags with a volume from 20 to 1000 grams.
