Characteristic

The set consists of four types of campaign pepper, ie black, red, white and green.

They differ from each other with their taste and smell that you can hardly find in pepper purchased in conventional supermarkets.

Black pepper After grounding, it releases the tones of eucalyptus, coffee and thyme accompanied by the aroma of lime bark. They gradually spill into the seaside aroma with developing fruit tones. The aroma of peach and nectarine is dominant, accompanied by the scent of pine and earthy tones of Cambodian mountain land full of minerals.

Rare red pepper It is an explosion of fruit tones with a finer burrow. At first, the tones of rose and rosehip fetus dominate, which subsequently pass into dried cherries. After two to three minutes they begin to develop a more characteristic fragrance for Kampot Pepper, such as citrus fruits, dried tangerines and a more earthy crust of sourdough bread.

White pepper It is a gentle but still peppery caress buds. After its ground, the smell of coffee, sage and cedar wood, accompanied by a fine aroma of nutmeg, grapefruit and other citrus, will develop. The taste of green lyophilized pepper combines fresh tones of freshly cut grass, green tea and citrus with a fine dot of sea salt taste.

Processing

Kampot Pepper is divided into three basic colors, which differ from each other by processing the fruits of pepper.

White pepper It is a specialty that is obtained from fully ripe red pepper grains. They are then dried in direct sunlight and soaked again to remove the red skin, and only the creamy white pepper grain is left.

Lyophilized green pepper is harvested from fragile, unripe pepper grains. Instead of classic drying in the sun, it passes through the process of lyophilization - drying of frost, which relieves grains. The added campaign salt maintains their freshness even during transport. After unpacking, a drop of oil or water is enough to suck back moisture and pepper regains its original structure and taste, as if it were just torn out of the creeper.
