Kampot pepper is grown in Kampot province located in the far south of East Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the vübec of the highest quality in the world. Ne nadarmo this pepper has received a protected geographical indication, similar to French champagne.

Characteristic

Rare red pepper is an explosion of fruity tones with a milder spiciness.

Initially, notes dominate of rose and rosehip fruit, which subsequently transition into dried cherries. After two to three minutes, more distinctive aromas of Kampot pepper begin to develop, such as citrus fruits, dried tangerines and an earthier crust of sourdough bread.

Processing

Red pepper is obtained by harvesting fully ripe peppercorns.

They ripen to vivid red of that color and are full of fructose, thanks to which this type of pepper has its unique taste.

Thanks to the careful selection corresponding to with strict requirements for the quality of the pepper produced in Kampot, as prescribed by the Kampot Pepper Association, only the very best peppercorns are hand-selected. They are subsequently vacuum-packed to ensure that preserved quality and freshness during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your doorstep.

Usage

Thanks to their varied taste, aroma, and pungency, different types of pepper are suitable for various purposes. Red pepper, thanks to its fruity character, is the king of cold cuisine.

It goes well with vegetable salads, it pairs well with risotto, soups and don't be afraid to experiment with it when preparing sweet desserts or mixed drinks. Rather than pairing with dark meat, combine it with fish or light poultry meat.. The more finely you grind Kampot pepper, the more intense the pungency will be, on the other hand, larger fragments or whole peppercorns will impart the dish with more distinct pepper notes.
