Kampot Pepper is grown in the Kampot province, located in the very south of East Asian Cambodia.

This is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper that is of the highest quality in the world. It is no coincidence that this pepper received a protected geographical indication, much like French champagne.
We purchase pepper from small family farms under direct trade conditions that ensure a fair remuneration for every grower, and we strive to promote this approach among other traders as well.

Characteristic

White pepper is a gentle, yet still peppery caress for the taste buds.

After it is ground, they will unfold outward of camphor, sage and cedarwood, accompanied by the delicate aroma of nutmeg flower, of grapefruit and other citrus fruits. After a few minutes in the mouth you can detect notes of nutmeg, of thyme and lemon balm underpinned by the aroma of cedar and black tea.

Processing

White pepper is a specialty obtained from fully ripe red peppercorns.

They are then dried on direct sunlightand then soaked again so that it is possible to remove the red skin, leaving only the creamy white peppercorn.

Thanks to the careful selection that meets the stringent requirements for the quality of pepper balanced from Kampot, established by the Kampot Pepper Association, only the best peppercorns are selected by hand. They are then vacuum-packed so that quality and freshness are preserved during the journey to the Czech Republic, where they are further sorted, packaged and delivered right to your table.

Usage

Thanks to the varied flavor, aroma, and spiciness, the different types of pepper are suitable for various uses. White pepper is ideal for light-colored meat.

They wonderfully enhance the flavor of seafood, they work well with risotto and creamy soups and its taste is not lost even when combined with a good paste. The more gently you grind the Kampot pepper, the more intense the spiciness will be, whereas larger fragments or whole peppercorns give the dish more distinctive pepper notes.
