Kampot pepper is grown in the province of Kampot located in the far south of Southeast Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It is no wonder that this pepper has earned a protected geographical indication, similar to French champagne.
We purchase pepper from small family farms under direct trade conditions, which ensure a fair reward for each grower, and we strive to promote this approach among other traders.

Characteristic

The pepper differs from each other with its taste and smell that you can hardly find in the pepper purchased in conventional supermarkets.

Black pepper releases tones after ground eucalyptus, coffee and thyme accompanied by the scent of lime bark. They gradually spill into the seaside aroma with developing fruit tones. The aroma is dominant peaches and nectarines, which accompanies the scent of pine and earthy tones of Cambodian mountain land full of minerals.

Rare red pepper is an explosion Fruit tones with finer burning. At first the tones dominate roses and rosehip fetusthat then pass into dried cherries. After two to three minutes they begin to develop a more characteristic fragrance for Kampot pepper like they are citrus fruits, dried mandarins and a more earthy crust of sourdough bread.

White pepper is a gentle but still peppery by caressing the taste buds. After his grinding, the smell develops Kafru, sage and cedar wood, accompanied by fine aroma of nutmeg, grapefruit and other citrus. After a few minutes in your mouth you can feel the tones of nutmeg, flower thyme and lemon balm -supported aroma cedar and black tea.

Processing

Kampot Pepper is divided into three basic colors, which differ from each other by the processing of the pepper vine fruits.

In the case of black pepper , the grains are harvested when the peppercorns are still green. They are then dried in the intense Cambodian sun, acquiring their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe pepper grains. These ripen to a deep red color and are full of fructose, which gives this type of pepper its unique taste.

White pepper is a specialty obtained from fully ripe red pepper grains. These are subsequently dried in direct sunlight and soaked again to remove the red skin, leaving only the creamy white pepper grain.

Freeze-dried green pepper is obtained by harvesting fragile, still unripe pepper vine grains. They are not traditionally sun-dried but undergo a process called lyophilization. During this process, the grains are freeze-dried, which removes moisture. Added Kampot salt keeps the grains fresh even during transport.

Thanks to careful selection meeting strict quality requirements for pepper exported from Kampot, set by the Kampot Pepper Association, only the best grains are hand-picked. These are then vacuum-packed to preserve quality and freshness during the journey to the Czech Republic, where they are further selected, packed, and delivered right to your table.

Thanks to the different taste, aroma, and spiciness, different types of pepper are suitable for various purposes.

Black pepper is a "universal"that fits into almost any dish. However, it is ideal to pair it mainly with dark red meat.It elevates any steak on the grill or pan to perfection, but it also finds its use in classic sauces, soups and goes well with pasta..

Red pepper, due to its fruity character, is the king of cold cuisine.It is suitable for vegetable salads,pairs well with risottos,soups, and don't be afraid to experiment with it in preparing sweet desserts or mixed drinks.Rather than with dark meat, combine it with fish or light poultry.

White pepper is suitable for light meat.It greatly supports the taste of seafood, pairs well with risottos, creamy soupsand its flavor won't get lost even in combination with good pasta.

The finer you grind the pepper, the more intense the spiciness will be,while larger fragments or whole grains lend the dish more specific tones of pepper.
