Kampot The pepper is grown in Kampot province located in the far south of eastern Cambodia.

This is an area that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the the highest quality in the world. It's no wonder that this pepper has earned a protected geographical indication, similar to French Champagne. From small family farms we purchase pepper at direct trade conditions, which guarantee a fair reward for every grower, and we strive to promote this approach among other traders. Red lyophilized pepper brings the maximally fresh taste of ripe red peppercorns, which we love so much in Cambodia.

Even in this case, expect a pepper flavor full of spiciness in in an extremely intense and rich form.In the flavor of red lyophilized pepper, it blends withfresh fruity tones with a subtle touch of sea salt.

Processing

Lyophilized red pepper is, after the green lyophilized Kampot pepper, the second one‐of‐a‐kind product in the world that we have developed.

It is obtained from fully ripe, harvested red Kampot peppercorns, whichare picked one by one at the end of the season. The rare grains of sweet red Kampot pepper are not traditionally sun‐dried, but instead undergo the so‐called lyophilization process. During it, the grainsare dried by freezing, which removes their moisture. When Kampot salt is added, it keeps the grains fresh even during transport. After unpacking, a drop of oil or water is all it takes to restore the moisture that the freeze‐dried pepper grains reabsorb, regaining their structure and flavor, as if you had just plucked them from the pepper vine.

The pepper, therefore, has a much more intense flavor than traditionally dried pepper and contains within itfor the first time three flavors – sweet, spicy, and salty!

Thanks to the careful selection that meets the stringent quality standards for Kampot pepper established by the Kampot Pepper Association, only the best and fully ripe red peppercorns are hand‐picked. However, very few of them are collected one by one andthe batch is, thanks to the demanding lyophilization process, limited to only 1600 sachets. This way, you get a taste of the very best of the best!

Usage

Lyophilized red Kampot pepper is suitable for almost everything thanks to its three dimensions of flavor.

Every dish is wonderfully seasoned with peppery notes, complemented by a light sweetness and saltiness. We recommend using it crushed.

Marvelouslyit excels on dark meat during summer grilling, in pepper sauces and for seasoning roasted meats in the oven in a home kitchen. It pairs well withseafood, grilled vegetables, as well as side salads. Its sweetness and a pinch of saltiness give it a unique characterfor enhancing homemade bundt cakes and light desserts with fruit and Christmas gingerbread.
