Kampot Pepper is grown in Kampot province, located in the far south of East Asian Cambodia.

This is an area where, thanks to its seaside climate and geological conditions, local farmers are able to produce pepper of the the highest quality in the world. It is not for nothing that this pepper has obtained a protected geographical indication, similar to French champagne.
We buy pepper from small family farms under direct trade conditions that guarantee a fair reward for every grower, and we strive to promote this approach among other traders as well.

Characteristic

The set consists of four types of Kampot pepper, namely black, red, white, and green.

They differ in both taste and aroma, which you can hardly find in pepper bought at ordinary supermarkets.

Black pepper After grinding, it releases notes of eucalyptus, camphor, and thyme, accompanied by the aroma of lime peels. These gradually blend into a maritime aroma with emerging fruity tones. Dominating is the scent of peach and nectarine, complemented by hints of pine and the earthy nuances of Cambodian mountain puly rich in minerals.

Rare red pepper is an explosion of fruity notes with a milder spiciness. Initially, notes of rose and rosehip dominate, which gradually give way to dried cherry tones. After two or three minutes, a more distinctive aroma typical of Kampot pepper begins to evolve, featuring citrus fruits, dried mandarins, and an earthier crust reminiscent of sourdough bread.

White pepper is a gentle yet distinctly peppery caress on the taste buds. Once ground, it unfolds aromas of camphor, sage, and cedar wood, accompanied by a subtle fragrance of nutmeg flower, grapefruit, and other citrus fruits. After a few minutes in the mouth, you can detect tones of nutmeg, thyme blossom, and lemon balm, all underpinned by the aroma of cedar and black tea.

Green freeze-dried pepper brings the utmost freshness of green peppercorns. Even in this case, expect a pepper flavor full of piquancy presented in a very intense and rich form. The taste of green freeze-dried pepper combines fresh notes of just-cut grass, green tea, and citrus fruits with a subtle hint of sea salt.

Processing

Kampot pepper is divided into three basic colors that differ by the processing of the fruits of the pepper vine.

In the case of black pepper the berries are harvested at the moment when the peppercorns are still green. They are then dried under the intense Cambodian sun, during which they acquire their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe pepper berries. They ripen to a deep red color and are full of fructose, which gives this type of pepper its unique flavor.

White pepper is a specialty obtained from fully ripe red pepper berries. They are subsequently dried in direct sunlight and soaked again to allow for the removal of the red husk, leaving only the creamy white pepper seed.

Freeze-dried green pepper is harvested from the delicate, still unripe berries of the pepper vine. Instead of traditional sun drying, it undergoes a process of lyophilization – freeze-drying that removes moisture from the berries. Added Kampot salt maintains their freshness even during transport. After unpacking, a drop of oil or water is enough for them to reabsorb moisture and for the pepper to regain its original structure and flavor, as if it had just been plucked from the vine.

Thanks to the meticulous selection corresponding to the strict quality standards for pepper exported from Kampot, set by the Kampot Pepper Association, only the very best berries are hand-picked. They are then vacuum-sealed to ensure that the quality and freshness are preserved during the journey to the Czech Republic, where they are further sorted, packed, and delivered right to your table.

Usage

Thanks to their varied flavor, aroma, and pungency, the different types of pepper are suitable for various purposes.

Black pepper is a universal seasoning, which is unlikely to get lost in any dish. Nevertheless, it is ideal to pair it primarily with dark red meat. It elevates every steak on the grill or in a pan to perfection, yet it also finds its role in classic sauces and soups and also pairs excellently with pasta.

Red pepper, thanks to its fruity character, is the king of cold cuisine.It is suitable for vegetable salads, pairs well with risotto, soups, and don't hesitate to experiment with it when preparing sweet desserts or mixed drinks.Rather than with dark meat, combine it with fish or light poultry meat.

White pepper is suitable with light meat.It excellently enhances the flavor of seafood, and pairs well with risotto, creamy soupsand its flavor doesn't get lost even when combined with a good sauce.

Freeze-dried green pepper from Kampot is the most versatile among the green peppers we offer. When crushed, it pairs wonderfully with any type of meat, be it dark, light, game, or fish. It freshens up pasta, baked dishes with cheese as well as with mushrooms and sauces. It definitely doesn't go unnoticed even in autumn soups, you can experiment with it in desserts and ice creams, and the most discerning palates can also enjoy it in combination with truffles.

The more finely you grind the Kampot pepper, the more intense the pungency, whereas larger fragments or whole grains will impart more specific pepper tones to the dish.
