Kampot pepper is grown in Kampot Province, located in the very south of East Asian Cambodia.

This is an area that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the highest quality in the world. Not without reason, this pepper has earned a protected geographical indication, similar to French champagne.

Characteristic

Black pepper, when ground, releases notes of eucalyptus, camphor, and thyme, accompanied by a hint of lime peel.

They gradually flow into a seaside aroma with developing fruity notes. The dominant aroma is peaches and nectarines, which are accompanied by hints of pine and earthy tones of Cambodian mountain soil rich in minerals.

Processing

In the case of black pepper, the berries are harvested at the moment when the peppercorns are still green.

Subsequently, they are dried on the intense Cambodian sun, during which they acquire their distinctive black color and wrinkled surface.

Thanks to a careful selection that meets the stringent quality standards for Kampot pepper, as set by the Kampot Pepper Association, only the best berries are hand-picked. They are then vacuum-packed so that quality and freshness are preserved during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your table.

Usage

Thanks to the different taste, aroma, and pungency, the various kinds of pepper are suitable for different purposes. Black pepper is a universal ingredient that hardly gets lost in any dish.

Nevertheless, it is ideal to pair it primarily with dark red meat. It will elevate every steak on the grill or in a pan to perfection, yet it also finds its use in classic sauces, soups and it also works wonderfully with pasta. The more finely you grind the Kampot pepper, the more intense the pungency will be, whereas larger fragments or whole peppercorns will impart the dish with more distinctive tones of pepper.
